In honor of Beyonce's '4' album release, I thought i'd dedicate today's Tasty Tuesday to Beyonce and her favorite fast food restaurant which is 'Popeyes Chicken & Biscuits'. Everyone loves Popeyes and I know I live for their yummy soft biscuits with jelly. Now I found a recipe for it online, I don't think it's the real one lol, but let's see how they come out. Without further adu, I present you Beyonce's favorite fast food restaurant 'Popeyes Chicken & Biscuits: Biscuit Recipe'. If it doesn't come out right, then you can always go and buy 3 for $1 lol. Popeye's Biscuit Recipe
5 cups all-purpose flour
1/2 cup vegetable shortening
1/4 cup sugar
1 tbsp sea salt

2 tbsp baking powder
1 cup butter (2 sticks) + 2 tbsp for optional topping

Pre-heat the oven to 425 degrees.
To get the biscuits started, simply combine the first four ingredients in your mixer and turn on a low speed until just combined.
The important element of biscuits is that the butter must remain in cold pea-size pieces up until the time that it enters a pre-heated oven. Having the butter cold allows it to sizzle in the heat of the oven, giving the texture that we desire. Over-mixing or using melted butter will not offer a great-tasting biscuit. If you must make biscuits in this manner, serve them to your in-laws.
Anyway, add the buttermilk and baking powder in your mixer until combined. Lastly, add the butter and only mix until the butter is well-dispersed. Over mixing will result in your butter becoming broken up in small pieces, rendering their biscuit texture-making qualities much diminished.
Lightly dust your counter and toss the Popeye's biscuit dough on top. Flatten and fold half of the dough on top of itself. Rotate 90 degrees and repeat about 4-5 times. Don't over work and don't worry if your dough is still fairly wet - this is what we are going for.
Using a cup rim or a biscuit cutter, press down on the dough and pull the excess dough away from the prepared biscuit. Don't twist the dough cutter or the biscuits will become misshaped in the oven during baking.
If your oven isn't ready for the biscuits by the time you've got the dough mixed up, you can let the dough rest in your fridge while the oven comes to temperature. Doing this will also allow the baking powder to create more leavening bubbles. For some, this is a good thing - just monitor how long your biscuit dough sits in the fridge with the added lift in the biscuits so as to create the profile you are going for. I usually let my biscuits rest for about 5 minutes.
Lightly top with melted butter and bake in 425 degree oven for 18 minutes or until golden brown on top.
